Break Kitchen | Episode 9: Spiced Yogurt Chicken Biryani

English versionالعربية

In the ninth episode of “Break Kitchen,” we turn to a globally beloved dish that is popular on tables across the region: chicken biryani. Our editorial recipe uses long-grain basmati rice and yogurt- and spice-marinated chicken, with a straightforward home-cooking method that delivers aromatic layers and separate grains of rice without complication.

Recipe Information

  • Preparation time: 25 minutes, plus 30 minutes for marinating if possible
  • Cooking time: About 45 minutes
  • Servings: 5–6 servings

Ingredients

For the chicken

  • 800 grams skinless chicken, cut into medium-sized pieces
  • 1 cup plain yogurt (about 240 grams)
  • 1 tablespoon lemon juice
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, crushed
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon ground chili, optional
  • 1 teaspoon salt

For the rice and assembly

  • 2½ cups basmati rice (about 500 grams)
  • 2 large onions, thinly sliced
  • 3 tablespoons vegetable oil or ghee
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 bay leaf
  • 1 large tomato, chopped
  • ½ cup chopped fresh coriander
  • ½ cup chopped fresh mint
  • ¼ teaspoon saffron soaked in 3 tablespoons warm water, optional
  • Salt for boiling the rice

Method

  1. Marinate the chicken: Mix the yogurt, lemon juice, ginger, garlic, turmeric, cumin, coriander, garam masala, chili and salt. Add the chicken and toss well, then cover and refrigerate for 30 minutes if time allows.
  2. Prepare the rice: Rinse the basmati several times until the water is almost clear, then soak it for 20 minutes and drain.
  3. Brown the onions: Heat the oil or ghee in a wide pot, then fry the onion slices over medium heat until golden. Remove about one-third of the onions and set them aside for garnish.
  4. Cook the chicken: Add the cinnamon, cardamom, cloves and bay leaf to the remaining onions, then add the tomato and stir until softened. Add the chicken and marinade and cook over medium heat until the chicken is nearly cooked through and the sauce has thickened.
  5. Parboil the rice: In a separate pot, bring a generous amount of salted water to a boil. Add the drained rice and boil until it is about three-quarters cooked; the grains should remain slightly firm. Drain immediately.
  6. Assemble the layers: Spread the chicken mixture over the bottom of the pot, then scatter half of the coriander and mint over it. Cover with the rice, then add the remaining herbs, the browned onions and the saffron water, if using.
  7. Final steaming stage: Cover the pot tightly and reduce the heat to its lowest setting for 18–20 minutes. Turn off the heat and leave the biryani covered for 10 minutes before opening it.
  8. Serve: Gently loosen the rice from the edges toward the center so that the chicken layers become visible without mashing the grains.

Tips for Perfect Biryani

  • Do not fully cook the rice before assembling the layers; finishing it through steaming helps keep the grains separate.
  • Use as heavy a pot as possible so the heat is distributed evenly and the bottom does not burn.
  • Avoid stirring the rice too much after assembly.
  • If the chicken sauce contains a lot of liquid, let it reduce slightly before adding the rice.

Ingredient Substitutions

Saffron can be replaced with a small amount of turmeric water for color only, though the flavor will differ. Chicken thighs or breasts can be used depending on what is available, bearing in mind that cooking times will vary. If garam masala is unavailable, use a mild blend of cumin, coriander, cinnamon and cardamom, noting that the flavor will be different.

Serving and Storage

Serve the biryani hot with yogurt cucumber salad or a green salad and lemon wedges. If there are leftovers, divide them into shallow containers and chill them promptly. USDA guidance recommends not leaving perishable food unrefrigerated for more than two hours (or one hour in temperatures above 32.2°C), and using refrigerated leftovers within 3–4 days. When reheating, heat the required amount thoroughly until it reaches 73.9°C.

Allergy and Food Safety Notice

The recipe contains milk and milk products because of the yogurt; use a suitable alternative in the event of an allergy, checking the product label. To prevent cross-contamination, keep raw chicken and its utensils separate from ready-to-eat foods, wash your hands and surfaces after handling it, and cook the chicken thoroughly.
