Break Kitchen | Episode 13: Cinnamon and Honey French Toast with Fruit

After the crispy falafel episode, Break Kitchen returns with a quick, popular breakfast that can be prepared with ingredients found in most homes. This is our editorial take on cinnamon and honey French toast with fruit: golden slices flavored with vanilla and cinnamon, topped with fresh fruit and a drizzle of honey.
Recipe Information
- Preparation time: 10 minutes
- Cooking time: Approximately 12 minutes
- Servings: 4
Ingredients
- 8 slices of thick toast bread or brioche, preferably one day old
- 3 large eggs
- 180 ml milk
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
- 1 tablespoon brown or white sugar, optional
- A small pinch of salt
- 20 g butter for cooking, or 1 tablespoon neutral oil
- 2 tablespoons honey for serving, or to taste
- 150 g sliced strawberries
- 100 g blueberries or any suitable seasonal fruit
Method
- Whisk the eggs, milk, vanilla, cinnamon, sugar and salt in a wide dish until well combined.
- Heat a nonstick skillet over medium-low heat, then add some of the butter.
- Dip each slice of bread into the egg mixture for a few seconds on each side, allowing it to absorb the mixture without becoming too soggy.
- Place the slices in the skillet without overcrowding and cook for about 2–3 minutes per side, until golden and the egg mixture inside is fully cooked. Repeat with the remaining slices, adding more butter as needed.
- Transfer the French toast to serving plates, then add the strawberries and blueberries and a light sprinkling of cinnamon. Drizzle with honey just before eating.
Tips for Perfect French Toast
- Thick, slightly dry bread absorbs the mixture while retaining its texture better than very soft bread.
- Do not raise the heat too high; the surface may brown before the egg mixture inside is cooked.
- Do not soak the bread for too long, especially if the slices are thin.
- To serve a hot batch all at once, keep the cooked slices temporarily in a warm oven while finishing the rest.
Ingredient Substitutions
Milk can be replaced with lactose-free milk or a plant-based beverage suitable for cooking, and butter can be replaced with a neutral oil. Bananas, apples or chopped dates can be used instead of blueberries and strawberries. For a less sweet version, omit the sugar from the egg mixture and use only a small amount of honey when serving.
Serving and Storage
Serve the French toast warm with fruit and honey, with yogurt on the side if desired. If any cooked slices remain, cool them quickly, place them in an airtight container in the refrigerator and use them within 3–4 days, then reheat the amount needed thoroughly.
Allergy Alert and Food Safety
In its basic form, this recipe contains eggs, milk and wheat, and commercial bread may contain additional allergens; therefore, check the label if you have a food allergy. Since the mixture contains raw eggs, wash utensils and surfaces after contact with it and make sure the egg mixture is thoroughly cooked. The U.S. Department of Agriculture recommends cooking egg dishes to a safe internal temperature of 160°F (approximately 71.1°C) and not leaving perishable foods unrefrigerated for more than two hours.
