Break Kitchen | Episode 10: Hejazi Chicken Saleeg with a Creamy Texture

English versionالعربية

In the tenth episode of Break Kitchen, we return to the Saudi table with Hejazi saleeg: a warm rice dish with a creamy texture and delicate flavor, served with roasted chicken and ideal for a special family lunch.

Recipe Information

  • Preparation time: 20 minutes
  • Cooking time: approximately 60 minutes
  • Serves: 4–5 people

Ingredients

For the Chicken and Broth

  • 1 whole chicken, approximately 1.2–1.4 kg, cut into 4 pieces
  • 1 medium onion, quartered
  • 2 bay leaves
  • 4 cardamom pods
  • 4 whole black peppercorns
  • 1 small cinnamon stick
  • 1½ teaspoons salt, or to taste
  • Approximately 1.5 liters water

For the Saleeg

  • 2 cups short-grain rice, washed and drained
  • Approximately 4 cups hot chicken broth
  • 2 cups warm whole milk
  • 2 tablespoons butter or samna
  • Salt as needed

For Browning the Chicken

  • 1 tablespoon melted butter or samna
  • ½ teaspoon paprika, optional, for color

Method

  1. Place the chicken pieces in a pot with the onion, bay leaves, cardamom, pepper, cinnamon and salt, then add the water. Bring to a boil and skim off the foam, then reduce the heat and cook until the chicken is thoroughly tender.
  2. Remove the chicken and strain the broth. Set aside approximately 4 cups for the saleeg, along with additional hot broth if needed.
  3. Place the rice in a wide pot and add the broth. Cook over medium, then low, heat, stirring occasionally, until the grains are very soft and the mixture begins to thicken.
  4. Gradually add the warm milk while stirring, and cook the rice over low heat for 10–15 minutes until it becomes creamy and tender. If the consistency becomes too thick, add a little hot broth or milk.
  5. Add the butter or samna and adjust the salt, then stir until the saleeg is smooth and glossy.
  6. To brown the chicken, brush it with the melted butter and paprika, then place it under the oven broiler for several minutes until golden, watching it carefully to prevent burning.
  7. Spoon the saleeg into a wide serving dish, place the browned chicken on top and serve hot.

Tips for Successful Saleeg

  • Short-grain rice produces a creamier texture than long-grain rice.
  • Add the milk while it is warm to reduce the temperature difference and maintain a smooth consistency.
  • Saleeg thickens as it cools; make its consistency slightly looser at serving than you ultimately want.
  • Do not over-season the rice itself; saleeg is defined by its delicate flavor and good broth.

Ingredient Substitutions

Chicken thighs may be used instead of a whole chicken, and butter may be replaced with samna. Those who cannot have cow’s milk may use an unsweetened dairy-free milk alternative suitable for cooking, bearing in mind that the flavor and texture will change.

Serving and Storage

Serve the saleeg hot with the chicken. A spicy tomato salad or green salad may be served alongside it. Place leftovers in shallow containers and refrigerate them within two hours of serving; consume within 3–4 days. When reheating, add a little milk or broth to restore the creamy consistency.

Allergy and Food Safety Notice

This recipe contains milk and dairy products. Use separate utensils for raw meat, and cook the chicken thoroughly before serving. Do not leave the saleeg or chicken at room temperature for an extended period, particularly because the dish contains milk and chicken.
